Смешать в сотейнике 3 ст. ложки соевого соуса, 3 ст. ложки саке, 3 ст. ложки мирина* и 1/2 ст. ложки сахарной пудры. Нагреть до растворения сахара, остудить и замариновать в получившемся соусе терияки филе лосося минут на тридцать.
Вынуть филе из соуса, обсушить бумажным полотенцем и обжарить на сковороде (добавив чуть растительного масла) или на гриле с обеих сторон до золотистого цвета.
Соус, в котором мариновалась рыба, перелить в сотейник, добавить 1/2 ст. ложки сахарной пудры и нагреть. Обмазать филе соусом с помощью кисточки и жарить до тех пор, пока соус не начнет пузыриться. Тоже проделать и с другой стороной филе. Рыбу достать, а соус еще немного подержать на огне, до загустения.
На тарелку разложить отваренные на пару овощи (в данном случае, стручковый горошек и морковь), сверху уложить рыбу, полить соусом терияки и посыпать семенами кунжута.
* Мирин (сильно подслащенное японское саке) - один из древних японских видов саке, его делают из сётю (дистиллированного саке). Сётю смешивают со сваренным на пару клейким рисом и кодзи (закваской из риса, наподобие дрожжей), дают перебродить, затем жидкость отжимают и фильтруют. Крепость 14 градусов. Используется только в кулинарных целях.
